We just had two hours of leaf blowing – and the yard looks great, but I sure did not feel like spending much time on dinner. And I was starved to boot. So I decided to make a Chicken Hash using some of the rotisserie chicken that I had picked up at the grocery store. And I wanted to make enough to have leftovers so that another weekend meal would be all set.
Friday Night Hash
Ingredients
2 large thin-skinned potatoes
1 tablespoon olive oil
1 medium red onion
1 medium red bell pepper
1-2 cups cubed rotisserie chicken
1 teaspoon dried thyme
1 teaspoon minced garlic
freshly ground lemon pepper
Directions
Assemble all ingredients.
Wash and pierce the potatoes and microwave on HIGH for about 8-10 minutes, or tender. Let the potatoes cool slightly before cutting coarsely into chunks. (I keep the skin on the potatoes for more fiber.) Get the onion, pepper and chicken diced and/or cut into bite-size pieces.
Heat oil in nonstick skillet. Add onions and saute until tender.
Add diced potatoes and saute.
Add bell peppers, garlic and seasonings. Stir together and heat gently.
Oh boy. Friday night dinner and a movie. Perfect!
Nutrition Note: This would be very easy to make meatless by omitting the chicken. And it is gluten-free if fresh chicken is used. The rotisserie chicken does have some gluten-containing ingredients in it.
