Okay, “back” may be a bit of an exaggeration…. But I’m starting to feel a little guilty about being waited on hand and foot at every meal, so I made dinner last night. And by “made dinner,” I mean that I pulled it out of the freezer and let Dane heat it up… Baby steps, guys, baby steps…
Remember awhile back when I made those casseroles to freeze? Well, we ate the Mexican Chicken Casserole last night and it was excellent! A little more watery than when you make it fresh (not sure why… any guesses?), but the flavor was still delish and no weird frostbite 0r anything from being in the freezer for a couple months.
Next step (baby step, that is): thaw AND reheat a meal.
Very often casseroles that are frozen will be slightly watery when thawed – not exactly sure why but I think some of the components separate out with the temp change. It may affect the appearance but usually does not affect the taste. And depending upon the type of casserole, a quick stir will make everything smooth and creamy again.
