Very busy outdoors today putting the yard to bed for the cool winter months… raking, pruning, trimming and mowing. So an easy dinner was needed, and something warm because it got really chilly at the end of the afternoon. And I had a few goodies on hand that made for a quick Saturday night supper before watching the movie Juno and wrapping presents.
This is the soup that I decided to serve: Chicken Tuscany by Progresso. The nutrition stats are good except for the sodium (890 mg/1cup). In one-half can there’s only 130 calories, very little fat, and 7 grams sodium. A rich broth with lots of cannellini beans, tomatoes, carrots, celery and spinach. And very flavorful.
To go with the soup, I had some leftover slices of a crusty multi-grain baguette, brushed with olive oil. I warmed them up first on a cookie sheet in a 325-degree oven. Other ingredients to pair with the bread were shredded mozzarella cheese, pepperoni slices, roasted red peppers, and prepared bruschetta (chopped tomatoes, sunflower and olive oils, Italian herbs and lots of garlic).
I put together different combinations on the bread slices. And then popped them into the oven for a few minutes to heat up.
Supper was ready to enjoy in just a few minutes. And soooo delicious!!
