We just love, love, love fish, and grew up with cod, halibut and haddock on a regular basis in Maine. So stopping by Giant for groceries after work, there was on-sale fresh haddock fillets. Picked up just half a pound for dinner – perfect choice since a friend from the TV station recently shared an easy recipe for baked haddock. Here tis.
Quick-as-a-Bunny Baked Haddock
Ingredients
1/2 lb. fresh haddock fillets (for 2 people)
1/4 cup skim milk
1/3 cup plain bread crumbs
2 tablespoons reduced-fat Parmesan cheese
1/8 teaspoon ground dried thyme
2 tablespoons soft no-trans-fat margarine
Directions
Preheat oven to 450 degrees – YES, 450 degrees. Line baking dish with foil, for easy clean-up. Gather all the ingredients together.
Pat the fish dry with paper towel before dipping.
Pour milk into a pie plate. Pour crumbs, cheese and thyme into a second pie plate and stir together. Ready for dipping… first in the milk, and then in the dry ingredients. No need to do the skin side – not eating that!
Place skin-side down on the foil-lined pan. Dot with the margarine. Pop into pre-heated oven and bake for 15 minutes – DONE!!! Serve with side veggies – I had corn for the starch and coleslaw for the veggies.
Kitchen Tip: Whenever you cook fish, if there is one side that has skin, place it skin-side down on a foil-lined baking dish. The skin will stick to the foil, and can easily be rolled up and thrown out.
