Last night we had sloppy joes, because there was a package of no-hormones-no-steroids Laura’s Lean ground beef in the refrigerator. And we LOVE sloppy joes, served over split and toasted buns. So besides the beef, here are the key ingredients to make this quickie supper from scratch.

Easy Sloppy Joes
Ingredients
1 Tbsp. canola oil
1 medium diced yellow onion
1 (1 lb). package of lean ground beef (or turkey)
1/2 – 1 cup ketchup (more if you like more liquid)
big squirt of yellow prepared mustard
1 Tbsp. water
1 Tbsp. vinegar
black pepper to taste
Directions
Heat oil, and add diced onions. Saute for 2-3 minutes to soften. Add crumbled ground beef, and cook over medium-high heat to brown, turning often. Add remaining ingredients and stir to combine. Reduce heat and simmer until serving time. Makes 4 servings.
We added a big tossed salad to round it out. It was perfectly divine for a Sunday end-of-the-weekend supper.
The leftovers are tonight! And here they are, with oven-roasted green beans (tossed with olive oil and lemon-pepper). I just used one-half a bun – they were large.
Aaah one of my favorite meals!

I bet we have sloppy joes monthly. And with 1 lb. of ground beef or turkey, it always is enough for two meals. Sweet.
